CARBONDALE, Colorado - A larger space with an actual bar, coupled with a prime spot on Carbondale's restaurant row, could be just the recipe in the second go-around for Hestia.
Restaurant co-owner Stacey Baldock and business partner Pagge Wheatley plan to bring their Mediterranean fare to 348 Main St. - the former location of the restaurant ella - with a limited-menu preview on Friday evening, followed by a grand opening and full menu on Monday, Dec. 7.
"We really want to continue on with the same philosophy as ella, with more of a family style restaurant," Baldock said. "They did an excellent job of offering affordable menu options, with items on the higher end if you wanted."
Mostly, it gives Hestia a second chance after a 2 1/2-year run in Basalt from 2003-05, where they were limited by a smaller restaurant space that lacked a bar, Baldock said.
"Not having a bar really hurt us," she said. "There are so many more positives with this location."
The new Carbondale space provides a ready-made, 5,000 square-foot restaurant with an open-air kitchen, patio seating during the warmer months, and a full bar.
"It has all the things we need to incorporate to be successful," Baldock said. "It's a real community oriented place."
She emphasized that Friday's preview is not an open house, but rather a chance for people to get a taste of what Hestia will offer, with a limited menu of items. The bar will also be open for business.
With Friday being the monthly First Friday art walk in Carbondale, as well as the Light Up Carbondale holiday celebration, she said she couldn't pass up the opportunity.
Baldock described Hestia's menu of offerings in an August 2003 article in The Aspen Times.
"There are 17 different countries in the Mediterranean, so our cuisine isn't limited to one type of food," she said. "If we want to do pasta, we can do pasta. We can do just about anything."
The new Hestia will be open for dinner at 5 p.m., Monday through Saturday starting Dec. 7. Eventually, Baldock said they hope to incorporate weekend brunches, as ella had become popular for, as well as live music and happy hour specials.
Some of the former ella staff is staying on at the new restaurant, she said, along with some of the staff from their former Basalt restaurant.
