At Restaurant Pan & Fork, we carry lots of Colorado products. Local farms and ranches help supply our kitchen, and the bar is Colorado proud, featuring Stranahan’s Colorado Whiskey, Breckenridge Bourbon, Marble Distilleries Vodka, Woody Creek Vodka, Richardo’s coffee liqueur, and 8 Colorado beers on draft including two from Roaring Fork Brewery. Chef Philip Kendzior has always felt at home in the kitchen. Growing up loving sweetbreads, stinky cheese, and brussel sprouts, he has developed an eat-all-love-all passion for food.
A graduate of the American Culinary Federation Apprentice Program, Kendzior began his culinary career at the Sheraton DTC in Greenwood Village, CO. Since then, he has traveled extensively while working with the country’s best chefs. Career highlights include working with and for Mark Fischer (owner of Town and Phat Thai). A stint in California’s Napa valley where he joined Thomas Keller at Bouchon Bistro, and three year at the playful Cowboys’ restaurant in Snowmass Village, CO. Kendzior’s experience also involves working on an Alaskan charter boat where the day’s catch was inspiration for his daily creation. He also had the pleasure and the powerful education of stagiers (intensive internships) with such acclaimed chefs as Frank Bannano of Denver’s Mizzuna and Tom Colicchio of New York’s Gramercy Tavern.
