Finbarr’s Carbondale location opens for dinner

Carbondale’s newest restaurant, Finbarr’s Irish Pub and Kitchen, opens for dinner today with a variety of pub grub and finer fare. The pub has been open for lunch since the first of the month in the former site of Hattie Thompson’s at 303 River Valley Ranch Drive.

According to Executive Chef and General Manager Joe Flamer, Finbarr’s took over the lease just a couple of weeks before opening its doors. The space had been vacant since last fall, when the short lived Hattie Thompson’s restaurant closed its doors.

Finbarr’s will have a similar menu to its Aspen location, including dishes from across the pond like corned beef and cabbage, bangers and mash, shepherd’s pie and, of course, fish and chips.



The Carbondale location boasts brick walls, wood ceilings, and what Flamer calls “the best deck in the entire valley.”

The restaurant will open for lunch at 11 a.m. and close around 9 p.m. on weekdays and 10 p.m. on weekends.



Flamer hopes Finbarr’s will last longer than its predecessor and be seen as a restaurant for all of Carbondale, not just River Valley Ranch. “We have a good name in Aspen, and I think people are excited about it in Carbondale,” he said. “I’m pretty sure we could be the ones that make it stick.”
