Chef Jesper Jonsson’s background and training make him a natural leader for the Edesia team of “celebrity chefs,” who will be demonstrating their culinary skills at Edesia in 2015. Before joining the Escoffier educator staff in Boulder, Jonsson was executive chef at Randolphs at Warwick Hotel in Denver. A native of Denmark, Jonsson trained in France at both Universite Paul Valery and Auguste Escoffier. With a solid background in French cuisine, he moved on to cook in Europe, New York and eventually Colorado for Danish diplomats, royalty, heads of state, captains of industry and a variety of film and sports celebrities. His guest lists have included such luminaries as Princesses Stephanie and Caroline of Monaco, Caroline Kennedy, Yoko Ono, Isabella Rossellini, Clint Eastwood, Roger Moore and Greg Norman, to name a few. He comes by his love for Colorado from having lived and worked on the Western Slope in and owned a popular restaurant in Meeker. Chef Jonsson has participated in Edesia for several years.

Wine Country Inn will once again host Edesia: A Palisade Culinary, Wine & Spirits Adventure. It is planned for Sunday, March 29.

Tickets for the VIP Luncheon (from 11 a.m. to 1 p.m.) cost $125 per person; they are limited and will be sold on a first come, first reserved basis (online or at Wine Country Inn). The VIP ticket will admit a guest to the main event as well.

General admission tickets for Edesia, which will be hosted from 1-5 p.m., cost $75 per person. Tickets may be purchased online — or — or at Wine Country Inn.

Edesia benefits Mesa County’s Marillac Clinic, and the event is named for the Roman goddess of fine food and drink.

According to Wine Country Inn, guests at the VIP luncheon will enjoy a meal crafted by Chef Jesper Jonsson “that celebrates the profound influence that the late Master Chef Auguste Escoffier has had on the culinary world.”

“To start, he will tease the palate with an Amuse Bouche of a Charcuterie platter served with house pickles and fresh baguettes,” a press release noted. “An appetizer of Carpaccio of beef topped with field greens salad dressed with basalmic vinegar, marinated oyster mushrooms and parmesan shavings will follow. His entrée is Poulet Chasseur served on a bed of home-made spaetzle sautéed in butter maître d’hotel. The grand finale is Escoffier’s celebrated dessert, Peche Melba, which he invented to honor the legendary Australian soprano Nellie Melba.”

All food courses will be paired with wines selected by Jonsson and Jack Ballanger, Wine Country Inn’s food and beverage manager.

Joining Jonsson are Josh Niernberg, executive chef and owner of Grand Junction’s Bin 707 Foodbar; Graham Mitchell, executive chef of Auguste Escoffier School of Culinary Arts in Boulder; and Tronette Alexander, Wine Country Inn’s pastry chef.

Activities planned for the main event include culinary demonstrations, live music, and a roving magician. A silent auction — with items ranging from hot air balloon rides to high-end vacations — is also part of the fun.

Wineries pouring at the event include Stoney Mesa, Graystone, Bearboat, Piper Sonoma, Whitewater Hill, DeBeque Canyon, Varaison, Talon Wine Brands, Gubbini Vineyards, Mesa Park Vineyards, Garfield Estates, Colterris, Carlson Vineyards, Grande River Vineyards and Canyon Wind.

Beer and spirits vendors include Oskar Blues Brewery, Breckenridge Distillery, Botanist Gin, Coingreau Liquers, Peach Street Distillers, Palisade Brewery/Dirty Hippie Beer, Remy Martin, Rockslide Brewery, Kannah Creek Brewing Company, and Mt. Gay Rum.

Food samples will be provided by Escoffier School, Enstrom, Famous Dave’s Bar B Que, Gelu Italian Ice, Spoons Bistro & Bakery, Local, Spot Bakery, Willy’s Wild Carvings, Z’s Orchards, Taste of Heaven Catering, Pattie’s Tiny Cakes, Red Rose Café, Blaine’s Tomatoes and Farm, Kannah Creek Brewing Company, Decadence Gourmet Cheesecakes, the Produce Peddler, the Lavender Lady, Tapestry Lounge and Caroline’s.
