Carbondale chocolate bar makes Colorado Chamber of Commerce’s top 10 list

Pollinator Chocolate’s Lavender Dark Chocolate Bar has made the list for Colorado Chamber of Commerce’s second annual Coolest Thing Made in Colorado competition, according to a press release. 

Owned by Mark Burrows in Carbondale as part of the Cocoa Club, Burrows put this chocolate bar together out of 70% dark chocolate, other ethically-sourced ingredients and lavender grown in Palisade. He started making it about two months ago. 

The chocolate bar goes up against other inventions such as NASA’s OSIRIS-REx mission spacecraft, designed and built by Lockheed Martin, and Cleragel by Gelsana Therapeutics, which improves wound healing for diabetic ulcers and other wounds, according to the press release. 



“I don’t expect to win because there’s actually stuff that saves peoples’ lives on that list,” Burrows said on Monday. “I’ll take it. Top 10 in anything is a good thing, right?” 

Burrows sells chocolate bars, bonbons, coffee, and is hoping to start selling cocktails eventually at the Carbondale location, at 786 Highway 133. He has books and tarot cards at tables for people to read or play with. He also sells chocolate out of the Chocolate Moose Ice Cream Parlor in Glenwood Springs, at 710 Grand Ave. in Bethel Plaza, under the bridge.



“I would buy little stickers and put them on each package that says ‘made top ten coolest inventions in Colorado,'” he said. “At least maybe I can win because everybody likes chocolate.”
