Corned beef and cabbage for a cause

Kurt Wigger, owner of The Buffalo Valley Inn, will prepare a massive Irish feast for St. Patrick’s Day, for the 25th year in a row.Wigger is from Switzerland, not Ireland, but he responded to a request from the Knights of Columbus many years ago and has been whipping up gargantuan Celtic feasts ever since.”It takes me about three days,” Wigger said. “I cook it all at the Buffalo (Valley Inn) and I do it all by myself.”Wigger and his staff cooked 500 pounds of corned beef, 300 pounds of cabbage and 250 pounds of potatoes every year to benefit the Knights of Columbus. He’s just getting started on this year’s project.”Last year we did 370 meals,” Wigger said.The Knights of Columbus donates the money to St. Stephen’s Church on Blake Avenue to do a particular project. The group traditionally raises about $1,500.Wigger’s dinner will be served at St. Stephen’s Church at 5 p.m. on Friday. Tickets are $10 each.It’s a very good cause,” Wigger said. “Of course, I think it’s a good cause. That’s why I keep doing it.”The Buffalo Valley Inn will also have St. Patrick’s Day lunch and dinner on Friday, serving corned beef and cabbage specials.
