A healthy snack that you’ll look forward to eating
We have to find many different ways to eat protein and fiber while still making it fun between meals. Midday snacks can be boring at times, but this is something you will happily stock your refrigerator with, and it will give you a boost of energy.
Dunk fresh veggies, your favorite crackers or even chicken into it.
You can substitute the black beans with your favorite legume or vegetable.

Black Bean Hummus Bruschetta
1 cup black beans
1 chipotle pepper
¼ cup tahini
2 cloves garlic
juice of ½ lime
crumbled feta cheese
Add 2 cloves of garlic and chipotle to food processor and finely chop. Add black beans, tahini and lime juice and blend until smooth.
Slice baguette thinly and brush with olive oil. Bake at 375 until golden brown.
Spread hummus on toasted baguette and top with crumbled feta cheese.
