Fish in foil for a fantastic, flavorful feast

Susie Jimenez

This week’s recipe will consist of something light yet hearty. You will need two 12-inch-by-12-inch foil pieces.

On the foil pieces place 4 to 5 ounces of your favorite fish, such as salmon, cod, halibut or even tilapia.

Season with 1/4 teaspoon each lavender, fennel seeds and coriander seeds. Sprinkle a little salt and pepper, and then top with your favorite vegetables. Mine were broccolini, baby potatoes, cauliflower and jalapeños.

Slice a lemon and place two rounds on top.

Close the foil pieces very tightly and place them in the oven for 15 minutes at 375 degrees.

You don’t need to do anything else except open up the foil and enjoy.
