BOULDER – Available in kegs or bottles, this is Redstone Meadery’s ‘Mead for the Masses” – and the meadery’s most popular brew.Redstone’s Nectar is 8-percent alcohol, medium sweet and sparkling. The taste is light and refreshing, and the honey flavor is prominent and well balanced in this simple, yet intriguing mead. Best served cold in a 10-ounce nectar goblet.Order mead and glasses at or visit the Redstone Meadery’s tasting room and store, located at 4700 Pearl St., unit 2A, in Boulder. Hours are noon to 6:30 p.m. Monday through Friday and noon to 5 p.m. Saturdays. Half-hour tours of the meadery are free, and include tastings for those 21 and older.

• Bottle of Black Raspberry Nectar with one cup honey to taste• A few splashes of balsamic vinegar• A few splashes of oil

• Blue cheese to taste• 1/2 cup toasted walnuts• Finely chopped shallots to taste• Bacon bits to taste (reserve some of the fat)

• Fresh baby spinachBoil down the nectar, add the honey till slightly thick, continued to boil with vinegar and oil. Toss with remaining ingredients and serve immediately on spinach. Serves 4.- Courtesy of
