Spice it Up: Sopas

"Sope" translates to soup bowl in Spanish. Masa harina, which is the corn flour used to make tortillas, is the same flour you will be using to make sopes. Follow the instructions on the package, but remember to season your mixture with salt and add a touch of spice. Chipotle powder, cumin, coriander or curry powder: By adding one of these spices you will elevate the flavor.
2 cups of mixed masa harina (makes 8 sopes)
Form a ball then flatten it out with the palm of your hands and create a wall around the pattie, like a soup bowl.
Bake for about five minutes in 350 degree oven to get rid of the raw flour taste. Remove from oven and place in corn oil over medium heat to fry until golden brown.
Remove and place on paper towels to soak the excessive oil.

2 cups cooked beans. You can use pinto, black and northern white beans in a can.
1 small yellow onion, diced
2 garlic cloves, minced
1 cup chorizo
In a saucepan, add one tablespoon of olive oil over medium heat. Add chorizo, onions, garlic and cook for about five minutes, then add beans. Allow to cook for about 15 minutes to incorporate the flavors. Mash them up with a potato masher or hand blender.
Season with salt and pepper.
2 bulb fennel, shaved with mandoline
1/4 cup chopped cilantro (don't remove the stems, they have the most flavor)
1 lime, juiced, and zest
1 roma tomato, diced
1/4 of a red onion, shaved with mandoline
1 jalapeño, diced
Mix in a bowl and season with salt and pepper.
Assemble: Place beans in the dome and top off with the fennel slaw.
Spicy Tomato Sauce
2 cups, canned tomatoes
4 chile de arbor, whole
2 scallions, chopped
1 cup cilantro, chopped
3 garlic cloves, whole
1 lime, juiced
salt and pepper to season
Place all the ingredients in a blender. If you want it a little more spiced add more chile de arbol or a jalapeño. This is so good you will be making it so much and keep it in the refrigerator. Use as salsa or enchilada sauce.
